Daily Intake of Lignans from
Food
The key naturally occurring
lignan precursors to the target metabolite enterolactone
commonly found in foods are the lignans ~matairesinol and
~secoisolariciresinol. Of the common food sources of lignans
unrefined flaxseed contains the highest amounts at approximately
350 mg/100 g. The target daily intake of lignans from food
in order to raise enterolactone levels is approximately 50
mg - 100 mg, roughly speaking this is 3–4 tablespoons
or 20 - 30 grams of unrefined flaxseed per day. Due to the
over processing of food and a low intake of fruits, vegetables
and unrefined grains most people do not get enough lignans
in their daily diet. Average intake in the US diet is less
than 1mg per day; well below the levels that research indicates
